Chef Lorenzo Loseto reports from the Ontario Food Terminal that the 2025 produce season is in full stride, and all produce typically available at the start of the growing season is at the Terminal. Prices are stable, except for avocados, which are expensive.
He bought excellent Ontario white and green asparagus, wild leeks, fiddleheads and a variety of Ontario hothouse produce. The asparagus may never be better than it is right now. His purchases included some heirloom tomatoes, which were both a bargain and better than usual. For some reason, there were numerous offerings of Ontario sweet potatoes in many different colours, which surprised him.
Chef particularly liked the look of the Californian berry crop.
Soft-shell crabs from Maryland have arrived. The second traditional, delicious spring arrival—spot prawns from BC—is expected in the next two or three days. The season for Vancouver Island spot prawns typically lasts no more than a week or two.
Meat-wise, sweetbreads are popular, as is our Japanese Wagyu beef second course, which is served with corzetti pasta and BC pine mushrooms.
Chef’s sticky toffee pudding is about to be replaced. Also, consider trying his new coconut guava gelato. He’s also brought back last year’s favourite: amarena cherry gelato.
